Marvellous mug meals you can whip up in minutes – perfect for any uni student

Sometimes uni life (or the lazy life) makes it difficult for us to have delicious meals around the clock and we usually have to stick with Pot Noodle life. But not anymore. Worry less about the pots and pans and make these marvellous microwave mug meals that take merely minutes to make.

Scrambled eggs

Prep time: 2 minutes

Ingredients: 

  • 2 eggs
  • 2 tablespoons milk
  • 2 tablespoons shredded cheese
  • salt, pepper, and any other herbs you choose to use
    1. Coat a 12 oz. microwave safe coffee mug or dish with cooking spray.
    2. Add eggs and milk and beat till blended.
    3. Microwave on HIGH for 45 seconds; stir.
    4. Microwave until eggs are almost set, 30 to 45 seconds longer.
    5. Top with cheese and season with salt, pepper, and herbs.

Single-serve Blueberry muffin

Prep time: 2 minutes

Ingredients:

For the muffin

  • 1/4 cup flour
  • 1 Tbsp sugar
  • 1/8 tsp baking powder
  • 3 Tbsp milk
  • 1 Tbsp coconut oil {melted}
  • 1/4 blueberries {fresh or frozen}

For the topping:

  • 1 Tbsp coconut oil
  • 1 Tbsp flour
  • 1 Tbsp raw sugar
    1. In a microwave safe mug combine the flour, baking powder, and sugar
    2. Stir in the milk and coconut oil
    3. Place the berries on top
    4. Make the topping by crumbling together the coconut oil, flour and sugar
    5. Sprinkle on top of the blueberries
    6. Microwave on high 90 seconds
    7. Cool slightly before removing

French Toast

Prep time: 2 minutes

Ingredients:

  • Two pieces of bread
  • 1 egg
  • Butter
  • 3 tbsp milk
  • Cinnamon
  • Optional: vanilla extract
  1. Cut bread into cubes
  2. Butter the inside of your mug and add in bread cubes
  3. Press down on bread but don’t compact too much as we need the liquids to find its way in
  4. Crack an egg into cup
  5. Add 3 tbsp of milk
  6. Sprinkle in the cinnamon
  7. Optional: Add in a vanilla extract for sweet/vanilla essence
  8. Mix together with fork
  9. Smoosh the mixture down a bit and leave for a minute for the bread to soak
  10. Put in microwave for one minute then add a further 10 seconds repeatedly until cooked to your preferred liking (with no runny eggs)

Top tip: this is great with syrup or whipped cream on top! 

Spinach Ricotta Lasagna

Prep time:

15 mins

Ingredients

  • 1/2 fresh lasagna sheet
  • 2 1/2 cups (75g) baby spinach, roughly chopped
  • 1/4 medium yellow bell pepper, diced
  • 1/4 cup part-skim ricotta cheese
  • 3 large basil leaves, finely chopped (optional)
  • 1/4 tsp kosher salt
  • 1/8 tsp granulated garlic
  • 6 Tbs pasta sauce or tomato sauce
  • 1/3 cup shredded part-skim mozzarella
  1. Cut the lasagna sheet in half, and cut each strip in half again. Place the pasta sheets into a bowl and pour  hot water until it covers all the pieces
  2. Chop the spinach and place it in a microwave-safe bowl. Cover the top with plastic wrap and pierce a few holes. Microwave for 1 minute. Take out the spinach and let it rest
  3. While waiting for spinach to cool, grate mozzarella
  4. Mix the spinach with the ricotta, pepper, granulated garlic, and salt before setting aside the mixture
  5. Microwave everything for 1 minute 30 seconds. NB: If the mozzarella hasn’t melted, continue to microwave at 15-second intervals until fully melted.
  6. Ready to serve
